
Nebbiolo Langhe DOC
The Nebbiolo grape variety is very delicate and difficult to cultivate, requiring the vines to be sheltered and south-facing. It is grown on moist, calcareous soil typical of the Langa hills.The grape harvest takes place in the second half of October, as this grape variety is late-ripening.Crushing is done with a roller machine that presses the bunches and separates the berries with their precious content from the stems, which will be reused in the vineyard as fertilizer.Fermentation takes place in stainless steel tanks. After fermentation, the must moves to the maturation and clarification phase in stainless steel and/or wooden tanks until it has reached maturity for bottling.Before going on sale, the wine is left to rest for another 3 months in the bottle, away from light.It is a wine that pairs perfectly with meat dishes or aged cheeses. To best appreciate its organoleptic characteristics, it should be served at a temperature between 18-20 °C.
