
Alta Langa Metodo Classico
Pinot Noir and Chardonnay, the grape varieties at the heart of Flavio Baudana's Alta Langa Metodo Classico, find their best expression on the hills of the Piedmontese Langhe, at altitudes above 250 meters above sea level, on clay and limestone soils that impart minerality and structure to the grapes. The cool and breezy climate of this area promotes slow and gradual ripening, enhancing the natural acidity of the grapes, an essential element for producing a quality sparkling wine. The harvest usually takes place at the end of September, when the grapes have reached the perfect balance between sugars, acidity, and aromatic complexity. The winemaking follows the traditional Metodo Classico: after an initial fermentation in tanks, the wine is bottled with the addition of yeasts and sugars for the secondary fermentation (prise de mousse), and ages on its lees for a minimum of 36 months, developing the aromatic complexity that distinguishes it. The result is a sparkling wine with a straw-yellow color and a fine and persistent perlage, with an intense and complex aroma featuring notes of toasted dried fruit and bread crust. On the palate, it is full-bodied, savory, and enveloping. Ideal as an excellent aperitif, it pairs perfectly with fish dishes, shellfish, white meats, and medium-aged cheeses. It should be served well chilled between 6 and 8°C.
